In the past when i ve needed cross breaks on a sheet metal part i ve always just sketched them onto the drawing and called them out as such.

Trying to add one bend across the path of another will obviously be difficult for your software to handle so typically they will just draw the bend lines without deforming the metal.

I did some googling and the best solution i ve found for inventor is to do exactly this except you sketch it onto the flat pattern instead of the drawing but these were all from several versions ago.
I know this is less than ideal because it means that geometry is not accurately represented in the model.
